What I am Eating - May

Another Great Month!

Here are some of my FAVORITE finds!

I came across a post on Insanely Easy Breakfast Foods bloggers eat... (but don't think are worth blogging.)

I'm going to blog about this one: Power Toast. I used gluten-free bread, almond butter, sliced banana, chia seeds, and slivered almonds. I found this yummy, easy, and addicting. I ate it for breakfast and as a snack.

PB&B just got even better

We loved this one so much... we made it twice! Last minute we needed to throw together a dinner for a couple of guests. This meal was definitely a winner.

"Cheater" Korean Beef Bowl

I've never actually had Brussels Sprouts. We've only recently begun adding them to our green smoothies and we luckily had them on hand for this recipe. It was really good and we will definitely make it again.

And of course.... I love dessert! Make sure to try these "Better than Box" Brownies!

Better than Box Brownies, Oh my gosh these were so good! We make single servings of cake in a mug all the time, but one night we were in the mood for something a little different. These brownies are gluten and dairy free, but you will never know it!

Kevin and I have become quite fond of almond flour. It tastes so good with chocolate recipes! We topped them with dairy free ice cream and whipped coconut cream!

I actually hid them on top of the fridge so I wouldn't be tempted to finish the rest of the pan. You will love these!

Memorial Day

As I sit here, I think about how bummed I am that Kevin is working and will be away from home yet again. I think about how my family is out of town and we have no barbecue plans. No family get together, no plans at all.

I look outside and see the flag in our front yard. As with every holiday, I am given the opportunity to teach my kids about the given holiday. Today is Memorial Day.

What does Memorial Day mean to you?


As I explained it to Kaylee... There are men and women who are away from home for months, and years. They leave their families and they go fight for what they believe in, the things that are important, and the things that are right. It is because of  them that we have the life that we do.

I don't have to go to war. Kevin does not have to go to war.

We do not leave to bring peace and provide safety to a whole country.

We get to stay here.

Sometimes... these brave men and women die. They fight the good fight, they stand up for those who are weak, they fight for others, and they put their own lives on the line.

They pay the price so we don't have to.

My heart is filled with so much gratitude.

Not My Baby Anymore

Landen has always called his older sister Kaylee, Tee-dee. We had to explain this to Kaylee, as she was confused and knew that Tee-dee was not her name. We all became accustomed to it, her cute little nickname.

This past weekend Landen has been calling his sister, Kay-wee or Tay-wee or Tay-lee.
I have been working on this here and there over the past couple of months, but something happened this weekend that made it stick.

EVERY time he talks to his sister it surprises me. I think, "Did he just say her name?" EVERY time.
Why is it such a surprise?  EVERY time? This little boy is growing up. How did it happen so fast?

After the initial shock, I feel sad, I feel down. I may never hear him say Tee-dee again!

Hearing him say Kay-wee is just about the cutest thing ever... but I still feel like holding onto that little toddler who tried so hard to communicate with his sister. Now they are becoming close friends and talking back and forth to each other. Although they fight... I know they care very deeply for one another. I love seeing their friendship grow!

What I Am Eating

For those of you who are new to the blog, "What I Am Eating" was created after I began my elimination and paleo diet. Often I get the question. "What can you eat?" As I find and try recipes out there, I share them with you! Here is a series of my favorite finds!
Creamy Spiced Cauliflower Soup

Creamy Spiced Cauliflower Soup was a family favorite! It was a quick and easy, mid-week dinner that I was able to throw together with the ingredients we had on hand. I think we were all surprised by how delicious it was! I decided to add a can of green chilies and we topped it with shredded chicken and avocado slices.

Kevin has missed two things: Enchiladas and Fettuccine Alfredo. This month I made both! I made this red enchilada sauce, flour tortillas for Kevin and these Grain- Free ones from Ancestral Nutrition for me.

ENCHILADASS

This easy homemade enchilada sauce takes just a few minutes to make, and tastes worlds better than anything you can buy in a can.
A quick pinterest search for "gluten-free alfredo sauce" is how I found this keeper! It was SO GOOD! Our whole family LOVED it! It was so simple to make too. Kevin and the kids ate organic pasta and I ate mine with brown rice pasta and zucchini spirals. We also topped ours with chicken and oven-dried tomatoes. Day Twenty!

We are coming to an end fast. Only today and tomorrow are left. This experience has gone by so fast, I can't believe it!

What are declarations?

Declarations are a statement or series of statements that you read and say aloud to yourself. If you see it and read it, you will become it! Don't believe me? Put it to the test. I dare you!

Day Eleven

Who doesn't enjoy girl time every now and then? I know that as a mom, I cannot not tell you when the last time was that I went out with a bunch of girls and just had fun. Married life changes that. Motherhood changes that. 

There is just something about spending time with another women. Talking, laughing, connecting, and listening to someone who is relate-able. Spending time talking to a friend just feeds us something that we are in need of.

Yesterday I challenged you to stretch and move your body. How did that feel? Was it easy? Was it hard? Did you enjoy the experience?

Love Who You Are Experience, Day #7

Day Seven

Wow! What a fun weekend! Did you girls have fun?

We started last week with a mental detox and for some of us a physical detox too. I know that I am growing right along with you! I enjoyed getting rid of negative thoughts and emotions and filling myself back up with good and positive things.

I had such a great experience with my detox bath, fresh fruit, almond butter, chocolate.... It was so rewarding to soak and slowly eat and enjoy my food. I think I need to slow down and enjoy my food more because that was DIVINE.

I woke up Saturday morning, I dressed up. It was a busy day, everything was non-stop. After all of our the day activities were over, I went on a date! My husband and I are trying to date more frequently. Dating is so much fun! I always forget what its like to spend time together. When my husband saw the fancy, black dress outfit I picked out for our date, he decided to take me out to a very nice place. He dressed up too! After a very slow and enjoyable dinner, we went to a movie, and then picked up our kids.

While we stayed and talked to the grandparents, my daughter came and asked me if I could play with her. I have to admit I struggle so much with playing! I did not end up making time on Friday... Busy working. Ugh. I'm a work in progress.

I took advantage of this opportunity. She wanted to play tag. So I did it. I ran, skirt and all, around the two levels of my parent's house. We played. After that, she wanted to play hide and seek, which is a favorite of hers. I realized though, I haven't played hide and seek for a very long time. This makes me sad because like I said, it is her favorite game. She laughed and had so much fun. And guess what? I did too..

I definitely need to play more!

Sunday is always such a short day, I always picture a slow and easy day, but rarely does that happen. My husband and I did have some time to eat dinner, watch a movie and enjoy dessert together. After everyone went to sleep, I grabbed my journal and did some writing.

As we start this new week, I want to remind you that the more you put into this experience, the more you will get out of it. This week we are going to begin stretching, stretching ourselves just a little farther than we have before. Pushing ourselves just a little bit more than normal. Stretching ourselves physically, mentally and emotionally.

Love Who You Are Weekend Experience

Weekend #1

Congratulations on making it through your first week.  Now is also a fun time to join us if you haven't already or catch up on anything you may have been wanting to do. I have designed our challenges to be simple and easy to fit into your normal weekend plans. You may need to make a couple of adjustments but thats okay! Don't stop now!

To keep everything simple, here is everything you need to know about the weekend:

Remember to pick one thing from Thursday, (Day Three) to complete sometime during the next few days - A self-nurturing activity or experience that will give you oxygen. With our busy day-to-day schedules this takes a commitment and maybe an actual spot on your calender.

Make time for yourself. You are so worth it!

Day Six - For Sunday

I always look forward to having a day of rest.Today I encourage you to strengthen the relationships you have. Spend quality time with the ones who mean the most to you.

Day Five


I attended a training a couple of months ago where the focus was on women and the powerful feminine energy that each of us has within us. Ever since that experience I have been increasing my feminine essence. 

I had an experience a few days following the training. It was a Saturday and Kevin was working all day. The kids and I went grocery shopping. I had been wearing make up for almost a week, which is something I never do. I was wearing a long skirt with boots that had heels. It was nothing drastic, nothing flashy or even bright. It was modest. I thought, I look GOOD! 

Something happened during that shopping trip. Everyone seemed to smile at me. Some shoppers even waved. I also noticed that more people offered me help. One day, while doing the same thing, a door was opened for me. GASP! What is happening??

Day Four - It's Friday!


And it's time to PLAY!


When I watch my children play, I learn from them.

I see their eyes light up. Their entire face and countenance is beaming. They put on the biggest smile, the kind that overtakes most of the space on their little faces.

They laugh.

They giggle.

They are free.

In the moment, they have joy. In the moment, they are enjoying life to the fullest, they are doing exactly what makes them happy.

I want to be more like them.

Chocolate Coconut Truffles

All of my life I have "hated" nuts, nuts of every kind, and coconut. Oh how things have changed!

I've pinned several different "energy bite" snacks lately. So many in fact, I may need to create a board just for energy bites. However, my all time favorite recipe came from a training I attended a couple of months ago. Chocolate and anything with chocolate = my oxygen. Your going to LOVE these!

Day Three


If you've ever been on an airplane or watched a movie with airplanes, you likely have heard these words of advice. In the movie, Moms' Night Out, (which one lucky person will win as part of the giveaway) this piece of advice is used as a metaphor and is the reason behind their "fun" night out.

I often wonder, if in the event of a sudden emergency, would I remember to put on my own mask before trying to save others. As a mother myself, intuitively I might be more focused on saving my children. As a wife, I might want to save my husband before myself. As a friend, I might want to help others, because they need my help too.

Now, of course the reason for this caution is obvious. If you are attempting to save someone else without oxygen, you'll pass out, becoming useless. Coincidentally you would then become somewhat of a burden, but mostly just useless.

When you are taken care of, What does that enable you to do for others?

Love Who You Are Experience, Day #2

Day Two

Welcome to Day Two. If you are just joining us, Welcome! I'm glad your here today. How did yesterday go for you? I hope you saw and experienced just some of the benefits of detoxing and were able to clear out that extra clutter you've been carrying around. I know I did.

I continue to detox whenever I hear those voices holding me down. You, my friend, can also do this when you feel like you've hit your limit. When your fears, your struggles, your stresses of life become so overwhelming that you just feel full. Please dump those negative thoughts where they belong, you will find that they disappear. You will find that they just don't bother you the way they use to. 

I hope you were able to clear out A LOT of space because today is a new day. Today we are going to begin the process of filling you back up. Filling you back up with all of the good, warm, and important things. Filling you with hope, love, confidence, desire, joy, excitement, purpose, you name it ____________. Today is a fresh start.

Day One




Welcome to day #1! I am so excited you are here!

Thank you for taking the time and making any sacrifices you may have made in order to join us. We are a sisterhood, and we are starting this journey together.

You are not alone.

I would like to invite all of you ladies to join the Love Who You Are Experience Event. I hope you will feel comfortable sharing your thoughts and emotions throughout the journey. You certainly are welcome to do so. Invite your friends to do this with you!


Tip of the Day:

Detox your mind and body regularly.


Likely you change your clothes everyday, you brush your teeth, you wash your face, your hands...

If we could visibly see our negative thoughts, emotions, and attitudes in the form of dirt, boogers, or any other bodily fluids we would get rid of them. Right? We wouldn't even think to carry them around with us all day. That would be gross.

When you wake up are you putting on the same old pair of resentment, or selfishness pants? Do you put on judgement, the ability to quickly criticize, or complain? Do you carry around that old bag of fear, anger, and shame?

What kind of feelings are holding you back? Wearing you down?

Today we are going to detox. You deserve a new start.

Chia Drink

Today I want to share with you a recipe to make your own chia drink. I've been eyeing those Mamma Chia drinks for months! I just could not bring myself to spend $3+ on a drink for myself. Now I don't have to. From what I've heard, the home-made version tastes better too! Problem solved!


Can I just say... this was SO GOOD! I did share a little with the hubby and children as we were driving to visit family. My little girl exclaimed.... "Oh this is SO YUMMY!!" We were shocked by her amazement, enthusiasm and the fact that she liked the texture of it.

Why Chia Seeds?


Chia seeds are said to be "among the most nutritious foods on the planet." They are loaded with fiber, which helps feed good gut bugs, protein, which helps control appetite, omega 3s, calcium, for strong bones, antioxidants, which may help with ageing and reducing cancer risks. They are also a low-carb friendly food, which may cause major improvements in Type 2 diabetes. As well as lower the risk for Type 2 diabetes and heart disease.

I've been curious about portabella pizzas for awhile now. If mushrooms are not your thing then this recipe is probably not for you. Also if your working on eliminating candida or (yeast) this would also be a recipe to skip.

I love meals that are fast and easy. I also love good food! We bought our portabellas at Costco. When my 5 year old told me she would eat them, I knew we had to take advantage of the moment.

Foreign Object

Theres a little guilt that comes when you have a smelly kid. And then lets just say that smelly kid has been smelly for quite some time. When did it start? I don't actually know. Oh no... more guilt. How could I have not know that something was wrong? After all, I am his mother. I should know everything.

Well some time ago our boy became a very smelly boy. After a bath he would smell like our favorite Shea Moisture bath soap for a few hours... then he was back to being smelly.

We noticed that one nostril seemed to run when the other one did not. We also noticed that the skin underneath that nostril would get red, sore, and irritated fast.

Tropical Fruit Salad

Need a fun, colorful and healthy salad? This recipe was a definite winner and a large-group favorite. Who doesn't love something so sweet and pretty?

Banana Chia Pudding

Ingredients

1 1/2 cups of unsweetened almond milk or milk of choice.
1 small banana
Sweetener of choice
1/4 cup of chia seeds
Dash of vanilla extract (optional)

Instructions

In a blender, blend almond milk and banana until smooth.
Add sweetener and vanilla if using. 
Pour into a quart size jar. 
Add chia seeds. Stir or shake well.
Chill for an hour or more. Stir or shake once or twice during the chilling hour.


Top with sliced bananas, coconut cream, (or whipped cream) sliced almonds, shredded coconut flakes, or any other nuts or berries.

Cute and Comfy Reusables



I finished up a second batch of washable pantyliners. I love that they are super soft and cute.

More and more I'm becoming open to the idea of cloth diapering, I'm not quite there yet... I'm just saying I'm open to the idea.

Cloth pantyliners on the other hand are awesome.

I love the huge amount of options I have for fabric, designs, and colors. I love that once they are made you will never have to buy a box of pantyliners again! This is just one more thing I do to be more frugal.

Reusables are also green, reducing garbage, plastic and paper usage and landfill space.

Avocado Chocolate Pudding

I've been putting it off for days. I can be so lazy. Tonight I finally tried chocolate pudding, made from avocados. I was just telling Kevin that the concept of this makes a lot of sense.

Avocados are creamy and well... bland. Why not sweeten them and make them chocolaty? They serve as a pretty basic base for just about anything I would imagine.

Possibilities.

Definitely some possibilities here.

What I am Eating - February

I was honestly surprised at how "cheesy" this ended up being. It seems to have all the right components: Fat, oily, creamy, salt, orange color, mold. (thyme always tastes moldy to me) Some how this just works.

Kevin is not a fan of squash but he really enjoyed this meal. We finished off a bag of organic squash from Costco. We will definitely make this again.

Energy Bars

This quick and easy energy bar recipe is super easy and great to have on hand. I keep a container of these in my fridge. You can individually wrap them and they will be ready to grab on the way out the door. I bought my cranberries from Good Earth, they are sweetened with apple juice. I'm not sure if that is a better alternative to sugar, but I will say they add a zing that I love! 

April Update: I tried these with half raisins and half cranberries and they were just not the same. It did cut down on sugar content.
