Chocolate Coconut Truffles

All of my life I have "hated" nuts, nuts of every kind, and coconut. Oh how things have changed!

I've pinned several different "energy bite" snacks lately. So many in fact, I may need to create a board just for energy bites. However, my all time favorite recipe came from a training I attended a couple of months ago. Chocolate and anything with chocolate = my oxygen. Your going to LOVE these!

Chia Drink

Today I want to share with you a recipe to make your own chia drink. I've been eyeing those Mamma Chia drinks for months! I just could not bring myself to spend $3+ on a drink for myself. Now I don't have to. From what I've heard, the home-made version tastes better too! Problem solved!


Can I just say... this was SO GOOD! I did share a little with the hubby and children as we were driving to visit family. My little girl exclaimed.... "Oh this is SO YUMMY!!" We were shocked by her amazement, enthusiasm and the fact that she liked the texture of it.

Why Chia Seeds?


Chia seeds are said to be "among the most nutritious foods on the planet." They are loaded with fiber, which helps feed good gut bugs, protein, which helps control appetite, omega 3s, calcium, for strong bones, antioxidants, which may help with ageing and reducing cancer risks. They are also a low-carb friendly food, which may cause major improvements in Type 2 diabetes. As well as lower the risk for Type 2 diabetes and heart disease.

Portabella Pizzas



I've been curious about portabella pizzas for awhile now. If mushrooms are not your thing then this recipe is probably not for you. Also if your working on eliminating candida or (yeast) this would also be a recipe to skip.

I love meals that are fast and easy. I also love good food! We bought our portabellas at Costco. When my 5 year old told me she would eat them, I knew we had to take advantage of the moment.

I made this for a quick breakfast and added a scoop of raw, organic protein powder. Would also make a great snack. With the coconut milk and frozen banana, it comes close to ice cream. Kid Approved, would be Kevin Approved if he liked my protein powder hehe.

Kevin and the kids used it as a filling inside flour tortillas. It would also be really good over rice or cauli rice! Kevin said he would eat this every day. 

*It wasn't too spicy for the kids, they actually ate all of it and both asked for seconds. I didn't add garam masala because I didn't take the time to find out what it is or where to find it. I would assume that is the spicyness. We did add frozen organic broccoli, left over baby bok choy and onion slices.

Fermented Lemonade

Fermenting foods is so EASY! Of course I didn't think that at first, but now that I have made several different items, I can safely say that anyone can do this!

I wanted to start off simple. I decided on Lemonade! Lemonade + Probiotics = A Happy Tummy

Below is a picture from a facebook post I made. You will see two half gallons of lemonade. I believe one was raspberry and one was strawberry. I also made a batch of Fermented Carrot Sticks.
