Easter Sunday Side-Dish
Perfect for any occasion really... This will be a favorite at summer barbecues.
Need a fun, colorful and healthy salad? This recipe was a definite winner and a large-group favorite. Who doesn't love something so sweet and pretty?

Serves 4-6 side-dish size servings. Double or triple it if you need to!
2 cups chopped pineapple
1 cup sliced strawberries
1/2 cup mandarin oranges, clementines or tangerines, peeled, segmented and halved.
2 kiwis, peeled and sliced
1 banana, sliced
1 tablespoon honey
1 tablespoon lime juice
1/4 teaspoon cinnamon
1/4 cup shredded coconut, I used unsweetened.
You could also add grapes, raspberries, blueberries, apple chunks, etc.
Simple cut up and prepare your fruit. Mix honey, lime juice and cinnamon in a separate bowl. Gently fold in and coat the fruit with the mixture, sprinkle with coconut before serving.
Being on such a strict diet can be challenging, but even more so when that involves cooking and packing your own meals for family gatherings. I want to make sure I have enough food to satisfy my hunger and keep me happy for the day. I would never expect or even want others to go through a hassle on my behalf.
Volunteering to bring a side-dish to share is a great way to provide a healthier option for others and a guaranteed safe and allowed food option for yourself. You never know what new ideas and taste adventures you may help others to experience. I wasn't sure how well the shredded coconut would be received by others, especially by picky children. But, guess what? Nobody cared. Everyone loved it! It was an awesome opportunity to share some good, clean, and healthy food.
Of course it doesn't take much to get a group of people to try a new fruit salad!
