What I am Eating - May

Another Great Month!

Here are some of my FAVORITE finds!

I came across a post on Insanely Easy Breakfast Foods bloggers eat... (but don't think are worth blogging.)

I'm going to blog about this one: Power Toast. I used gluten-free bread, almond butter, sliced banana, chia seeds, and slivered almonds. I found this yummy, easy, and addicting. I ate it for breakfast and as a snack.

PB&B just got even better

We loved this one so much... we made it twice! Last minute we needed to throw together a dinner for a couple of guests. This meal was definitely a winner.

I've never actually had Brussels Sprouts. We've only recently begun adding them to our green smoothies and we luckily had them on hand for this recipe. It was really good and we will definitely make it again.

And of course.... I love dessert! Make sure to try these "Better than Box" Brownies!


Better Than Box Brownies {that happen to be paleo!}

Better than Box Brownies, Oh my gosh these were so good! We make single servings of cake in a mug all the time, but one night we were in the mood for something a little different. These brownies are gluten and dairy free, but you will never know it!

Kevin and I have become quite fond of almond flour. It tastes so good with chocolate recipes! We topped them with dairy free ice cream and whipped coconut cream!

I actually hid them on top of the fridge so I wouldn't be tempted to finish the rest of the pan. You will love these!

Portabella Pizzas



I've been curious about portabella pizzas for awhile now. If mushrooms are not your thing then this recipe is probably not for you. Also if your working on eliminating candida or (yeast) this would also be a recipe to skip.

I love meals that are fast and easy. I also love good food! We bought our portabellas at Costco. When my 5 year old told me she would eat them, I knew we had to take advantage of the moment.

Rainbow Trout and Veggies

I was in need of a quick dinner after a long afternoon of blogging about good paleo food. I pulled out a package of Rainbow trout that my daughter caught with her papa.

I slow cooked it in my cast iron with coconut oil, salt, pepper and dried dill. I threw in some blanched asparagus also from my freezer. I then added onions and peppers that I broiled in the oven with avocado oil.

Simple. Fast. And oh so good for you!

Spicy Pepper Chicken Stir Fry

Kevin and the kids used it as a filling inside flour tortillas. It would also be really good over rice or cauli rice! Kevin said he would eat this every day. 

*It wasn't too spicy for the kids, they actually ate all of it and both asked for seconds. I didn't add garam masala because I didn't take the time to find out what it is or where to find it. I would assume that is the spicyness. We did add frozen organic broccoli, left over baby bok choy and onion slices.
