Chocolate Coconut Truffles

All of my life I have "hated" nuts, nuts of every kind, and coconut. Oh how things have changed!

I've pinned several different "energy bite" snacks lately. So many in fact, I may need to create a board just for energy bites. However, my all time favorite recipe came from a training I attended a couple of months ago. Chocolate and anything with chocolate = my oxygen. Your going to LOVE these!

I feel like I'm now catching up on a whole life's worth of crunch: almonds, almond butter, cashews, walnuts, and lots and lots of crunchy unsweetened coconut flakes. 

For this recipe you will need:
  • 1 1/2 cups of dried unsweetened coconut flakes or shredded coconut works too! and an additional 1/4 cup or so for rolling the truffles in.
  • 3/4 cup cocoa powder
  • 1/2 cup pure maple syrup
  • 1/6 cup of coconut butter - softened
  • 1/2 tablespoon pure vanilla extract
  • 1/8 teaspoon sea salt
  1. Mix all of the ingredients together in a bowl. 
  2. Cover and refrigerate for 30 minutes.
  3. Roll into balls.
  4. Roll the balls in the unsweetened coconut
  5. Put finished balls back into the fridge until they are firm.
